I've had a lot of people asking me about this orange salad - so thought I'd post the recipe. The key to this salad is to let it chill for several hours before you serve it, so the flavors can mesh. It's so good especially on a hot day.
- 4 oranges
- 1 red onion, cut in paper thin slices
- fresh oregano
- extra-virgin olive oil
- salt & pepper to taste
Peel the oranges, carefully removing white membrane. Cut crosswise into thin slices and discard any pits. Arrange orange slices on a serving dish. Separate onion slices into rings and scatter over the oranges. Sprinkle on the oregano. Season with salt & pepper. Drizzle olive oil all over.*** Refrigerate until ready to serve (needs to chill a while for flavors to blend).
***I find this works best when using a mister to spray the olive oil. - it applies a finer layer all over.
